Thai Salad

Eating a salad a day is a good dietary principle to live by, and this recipe's flavors help spice up those greens with some ethnic flavors from Thailand. You may want to have two salads a day after trying this recipe!

Crisp lettuce 1 med. head
Cucumber 1 sm., peeled, seeded and sliced
Carrot 1 med., shredded
Bell pepper 1 sm., thinly sliced
Papaya or Mango 1, thinly sliced
Potatoes 2 med., boiled and sliced
Ripe tomatoes 2 med., bite-size
Hardboiled eggs 4-6, wedged
Cilantro, mint, basil, coriander Pinch to small handful, to taste
Lime or lemon Sliced, to taste


Combine all ingredients in a large bowl and drizzle delicious, exotic dressing.

Put chunky peanut butter in a medium bowl. Add boiling water and whisk until well combined. Whisk in remaining ingredients.
