Black Beans and Eggs

Packed with protein and flavor, this meal is perfect for the body after a long run.

Ingredients Amount
Black beans, dried 1 Cup
Jack cheese 2 Cups
Onions 1/2 Cup, chopped
Savory 1 1/2 Tbsp
Salt 1 Tsp
Jalapeño 1/2 of the pepper
Jalapeño seeds 1/2 of the pepper, or to taste
Butter 1 1/4 Tbsp


Soaking the beans:

Soak 1 cup of black beans in plenty of water overnight. The amount of water is more than double the amount of beans. Drain off the water the next day and fill with fresh water to approximately ½ inch above the beans.

Cooking the beans:

Simmer beans on medium heat for approx 6-7 hours (5 hours soaked), checking the water level periodically. The top of the beans should always be covered with about a ½ inch of water. You don’t want to use so much that it has to be poured off.

As the cooking proceeds and the water evaporates, the beans will have a tendency to stick. Stir them occasionally and lower the heat when necessary. During the last half hour or so, the heat needs to be very low and the beans carefully watched and stirred to keep from sticking.

1. About one half-hour before beans are done, add the savory to the beans. Break up the savory twigs. Mix, cover and continue simmering.
2. Cut onions in small squares of approx ¼” by ¼”. In butter, sauté onions uncovered on medium heat for about 10 mintues or until they are somewhat transparent. Set aside.
3. Saute finely diced jalepenos on medium-high heat for about 5 minutes or until they are soft. Some of them may turn golden brown, but they should not be dark, burnt or crispy.
4. Add onions, salt and part of the jalepenos to the beans. Still well and taste. If needed, add more jalepenos. The hot is mellow for this meal.
5. Cook on very low heat for 5 minutes.
6. Serve beans over the rice and quickly sprinkle 1 cup of cheese.
7. Fry, poach, or scramble four eggs, two for each serving of beans.
8. Divide beans into two servings.
9. Place eggs over beans.
10. Sprinkle remaining jack cheese on top of eggs and place both servings in the broiler, so that they cheese melts nicely on top of the eggs and beans.
